Fusion is confusion, say chefs who believe in the magic of authenticity in food. But fusion is also evolution, adaptation and experimentation and sometimes the results can be pleasing too. But most of the time it may end up in total disappointment. Over the years some of these ‘creative’ delicacies have found their way to the regular menu in the name of innovation and whether we like them or not, we do have to bear with them as they are often the “IT”, “in” or “in vogue” dishes.
